You will need: Aubergine (large) 1 Tomatoes 3 Spring Onion 1 Garlic Cloves 2 Coriander leaves (chopped) 2 tbsp Lime Juice a dash salt to taste Method: 1) Roast the Aubergine till well cooked. Peel the skin well cool. Dice the aubergine into small cubes. 2) Chop the tomatoes, spring onion & garlic finely. 3) Combine all the ingredients in a bowl and garnish with coriander leaves. Serve with crackers

You will need:
