Aubergine Dip

You will need:

Aubergine (large)                 1  

Tomatoes                           3

Spring Onion                      1

Garlic Cloves                       2

Coriander leaves (chopped)     2 tbsp

Lime Juice                           a dash

salt to taste

Method:

1) Roast the Aubergine till well cooked. Peel the skin well cool. Dice the aubergine into small cubes.

2) Chop the tomatoes, spring onion & garlic finely.

3) Combine all the ingredients in a bowl and garnish with coriander leaves. Serve with crackers

      Lemon Dip

You will need:    

Philadelphia Cheese            1/2 cup

Lemon Juice                       1/2

Honey                                 2 tbsp

Pepper                                1/4 tsp

salt to taste

Method:

1) Whizz all the ingredients in a blender.

2) Chill and serve with crackers

Coriander Dip

You will need:

Thick Yogurt            1 cup

Coriander leaves           1/2 cup (chopped)

Green Chilli                 1

Garlic                          1 clove

Salt                             to taste

Method:

1) Whizz all the ingredients together in a blender.

            Herbed Dip

You will need:

Philadelphia Cheese            1/2 cup

Coriander Leaves                 1/4 cup (chopped)

Mint Leaves                        1/4 cup (chopped)

Sour Cream                         20 ml

Lemon Juice                       1 tsp

Salt                                   to taste

Method:

1) Whizz all the ingredients in a blender until smooth..

2) Chill and serve with carrot and cucumber sticks.

          Mango Dip

    You will need:

 

Mango (medium size, diced)      1 

Tomato (large, diced)               1

Spring onion                         1

Capsicum (diced)                    1/4

Ground Cumin                       1/4 tsp

Garlic (finely chopped)            1 clove

Coriander Leaves (chopped)       1 tbsp

Green Chilli  (chopped)             1

Method:

1) Place the diced tomatoes in a strainer and strain the excess tomato juice.

2) Place all the ingredients (including the tomatoes) in a bowl and mix well.

3) Cover with cling film and refrigerate till you are ready to serve.

4) Sprinkle salt over the dip before serving. 

Serve with Chips / Crackers as a starter
